  • The daily turnover rate is calculated as: daily sales needed / (seats x occupancy rate x average spend). It estimates how many times each seat must turn over in a single day.
  • Daily sales needed is found as: monthly sales target / open days per month. It is the revenue you must earn each day.
  • Daily customers needed is calculated as: daily sales needed / average spend, indicating how many guests you must serve each day to reach the goal.
  • The occupancy rate (seat utilization) is a factor that accounts for seats not being fully filled because of shared tables, solo diners, and similar realities. At 100%, every seat is assumed to always generate the full average spend.
