How it works

  • Sales per labor hour is found as "sales ÷ total labor hours." It represents the revenue generated when one employee works one hour and is a key indicator of restaurant labor productivity.
  • Total labor hours is the sum of actual hours worked by all staff (including full-time and part-time). This tool lets you either enter the hours directly or derive them from "staff count × hours per person."
  • When you choose "staff count × hours per person," the entered head count and hours per person are multiplied to get total labor hours, which is then divided into sales to compute sales per labor hour.
  • For an accurate result, enter the sales for a period (a day, a week, a month, etc.) together with the total labor hours for that same period.
